My favorite every day muffin recipe.
Pumpkin Spice Muffins
*Preheat oven to 350º F / 177º C / Gas Mark 4*
1/2 Cup Coconut Milk (or Almond Milk)
3 Ripe Bananas (mashed)
1 TBSP Pumpkin Spice
1 – Add melted coconut oil, eggs, vanilla extract and ACV (apple cider vinegar) in bowl and whisk briskly for 30 seconds.
2 – Put coconut flour, almond flour, baking soda and salt together in a sifter and sift directly into bowl with wet ingredients (step 1). Mix until completely combined.
3 – In a separate bowl, mix coconut milk and ripe mashed bananas, forming a puree-type consistency. Sprinkle in Pumpkin Spice and stir carefully.
4 – Add milk/banana/spice mixture to to the main batter and mix until combined throughout. Do no overmix.
5 – Spoon evenly into muffin tins.
6 – Place on middle rack in oven and bake for 30-35 minutes (please adjust, as needed).
7 – Muffins are done when an inserted toothpick comes clean. Remove and let cool for at least 5 minutes! Taste amazing warm, but take care not to burn your fingers…
