Pumpkin Spice Muffins: Healthy Bites You Can Eat Every Day

Starting your day off right with a healthy, yet equally delicious meal makes sense, right?

What’s more inviting than ready-made muffins? Eat them alongside your favorite cup of morning coffee, or spread with almond butter for a satisfying snack. Super fast, simple recipe that won’t cost you the world…

My favorite every day muffin recipe.

Pumpkin Spice Muffins

*Preheat oven to 350º F / 177º C / Gas Mark 4*

2 TBSPs Coconut Oil (gently melted/low)
4 Eggs
1 TSP Vanilla Extract
1/2 TSP Apple Cider Vinegar

1/2 Cup Coconut Flour (sifted)
1/4 Cup Almond Flour (sifted)
1 TSP Baking Soda
1/4 TSP Sea Salt (optional)

1/2 Cup Coconut Milk (or Almond Milk)
3 Ripe Bananas (mashed)
1 TBSP Pumpkin Spice

*Coconut Oil or Palm Oil (sustainable source) for greasing the muffin tin*

1 – Add melted coconut oil, eggs, vanilla extract and ACV (apple cider vinegar) in bowl and whisk briskly for 30 seconds.
2 – Put coconut flour, almond flour, baking soda and salt together in a sifter and sift directly into bowl with wet ingredients (step 1). Mix until completely combined.
3 – In a separate bowl, mix coconut milk and ripe mashed bananas, forming a puree-type consistency. Sprinkle in Pumpkin Spice and stir carefully.
4 – Add milk/banana/spice mixture to to the main batter and mix until combined throughout. Do no overmix.
5 – Spoon evenly into muffin tins.
6 – Place on middle rack in oven and bake for 30-35 minutes (please adjust, as needed).
7 – Muffins are done when an inserted toothpick comes clean. Remove and let cool for at least 5 minutes! Taste amazing warm, but take care not to burn your fingers…

Healthy Option for Breakfast and Snacks

Great balance of carbs, protein and healthy fats. With no added sugar! Vegetarian and Paleo-inspired (non-grain, gluten-free). My kid loves them and I eat them every day.

The best part? You can make these in advance for the week or even freeze extra batches…incredibly simple to make – no fancy equipment.

I’ve linked all the ingredients I use directly to *Amazon. Any purchases made through the links provided may earn me a small commission, which helps! Thank you!
